Robin and I bought Bubba's (known as Bellisima and then Millsy's Boathouse) from Tom Mills in the spring of 2008. Bubba was previously the owner of The Gray House Restaurant in New London which he bought from the Prescott family in 1975. Ironically, Tom bought The Gray House from the Williams Family Inc. in 1995 and established it as The Flying Goose.
Heather joined Bubba's staff about a year after they opened their doors. She started her career as a bartender/server where she quickly began learning the ropes on a career path she had no idea was developing. Bubba's continued to expand its local reach by offering full catering services and committing to supporting local organizations and athletic programs.
As the years progressed so did the strength of Bubba's culinary achievements and the restaurant's reputation also continued to flourish. All the while, Heather remained a true and loyal employee, always having the restaurant's best interest at heart.
Following what would become some challenging years through the COVID pandemic, and the simple fact that Bubba was approaching well deserved retirement, it was 2023 and time for he and Robin to move on.
This is where Heather steps up and voices her desire to give restaurant ownership a try. She had been with Bubba and Robin for 14 years and pretty much "learned the ropes".
A little convincing on Bubba's part that she was ready to make it happen, a realization that running her own business was something she was ready to try, and the fact she would be able to bring in her family as support and valuable co-workers was all it would take. A little creative financing and the deal was set.
So, as the sun sets over the Lake and the town of Newbury continues to flourish, Bubba has found that retirement fits his new life-style and Heather has continued to grow and prosper as owner and operator of Bubba's Bar & Grille.
On a side note, don't hesitate to call her "Bubbette", (kind of fits, doesn't it!)
